From the heart of Detroit’s Eastern Market, Fairway Packing is renowned for supplying the finest and Ocean Prime is among its largest purchasers of dry-aged ribeye. Gino and his family started the dry-aging process at Fairway Packing nearly 12 years ago and have perfected his craft.
Crafting this culinary masterpiece isn’t a simple task—it’s a labor of love that spans 35 to 38 days. Within Fairway Packing’s dedicated dry-aging chamber, a meticulous process unfolds. Gino explains, “Every day, we spray the ribeye with Woodford Reserve Bourbon, ensuring that every bite of the ribeye is infused with the rich flavor of Woodford Reserve.” Jason Shelley, one of our regional chiefs at Ocean Prime, explains the flavoring “The Woodford Reserve gives the ribeye a little more of a sweet nutty flavor, akin to a toasted bourbon.
