The Limelight’s signature cocktails for the evening are the Expatriate (Rhine Hall pear brandy, St. Germain Elderflower, Chareau aloe liqueur, cucumber, and lime) and Friends Like These (George Dickel rye, Amaro Montenegro, Giffard apricot brandy, demerara, lemon, and Angostura bitters.
Water Grill Offers an Ocean of Options

This January, the dozens of Texas Longhorn cattle leaving LoDo’s Union
Station and trotting up 17th Street for the 2025 National Western Stock Show Parade will probably not notice the statue of a seahorse wearing an apron, holding a covered platter and presiding over the entrance to Water Grill at 1691 Market Street.
The seasonal lobsters and other crustaceans swimming in the restaurant’s live saltwater tanks are just as unlikely to notice the cattle train outside their window.
Parade watchers, however, would do well to take notice and walk through the doors under the seahorse. Although patrons find themselves more than a thousand miles from any ocean, this is where they will discover some of the highest-quality seafood in town.
Water Grill general manager Mallory Fink says guests are surprised — and thrilled — by the variety and quality of seafood on a Denver menu; this is not by accident. Water Grill receives multiple shipments each week from the company’s exclusive seafood distribution company.
Water Grill is family-owned and operated by King’s Seafood Company, based in southern California. The company was co-founded by cousins Sam and Jeff King, whose fathers started building restaurants together in 1945. The nearly 80-year legacy of dedication to superior quality and what’s in season ensures the integrity of the daily-printed menu at Water Grill and keeps guests returning.
The company prides itself on “Delivering Great Seafood To America,” making several weekly flights to Denver to keep Water Grill supplied with outstanding selections. June’s first-of-season selections include wild Columbia River king salmon, wild Maryland softshell crab, and wild Australian spiny lobsters that swim in the saltwater tanks. These lobsters are clawless and have more tail meat than their cousins from Maine. The raw bar features 16 oysters, always eight Eastern and eight Pacific, such as Hollywood, Pleasant Bay and Riptide (Eastern), Pacific Plump, Hama Hama and Sol Azul (Pacific).
If the annual cattle drive on 17th Street inspires a mood for beef, guests can order 8- or 12-ounce cuts of filet mignon, a 20-ounce prime bone-in ribeye or a 12-ounce “American Wagyu” New York strip steak.
The beverage menu doesn’t disappoint either, featuring over eight pages of wine selections, draught beers from Colorado breweries and an extensive list of cocktails and spirits.
Heather Rendon, event and sales manager, eagerly anticipates the completion of a new meeting and banquet space for corporate and social use. In October, planners will have the exciting opportunity to book four customizable private dining spaces, from a board room that can seat up to 32 to a flex space that can seat up to 100 people, offering the same great food and beverage options that delight restaurant guests.

Juneteenth Music Festival
Denver and Colorado adopted Juneteenth as an official holiday in 2022. Note that most (but not all) city offices will be closed in observance on Wednesday, June 19.

Building a Vibrant Downtown Denver: Your Input is Needed!
Mayor Johnston recently announced a proposal to invest over $500 million to stimulate economic development downtown. He hopes to extend the Downtown Development Authority beyond Union Station into the rest of downtown — including all of LoDo, from Speer to 20th Street. With this announcement, the City and County of Denver launched a survey so people can opine on what public investments they would most like to see downtown.
